Citrus-Dressed Asparagus
(Moosewood Restaurant Low-Fat Favorites)
1 lb. asparagus
2 tsp. olive oil
4 tsp. lemon juice
4 tsp. orange juice
generous pinch of cayenne pepper
salt and ground black pepper to taste
Snap off the tough ends of the asparagus spears. Rinse the spears and cut them into 2- and 3-inch pieces. Steam asparagus for 7 to 10 minutes till just tender.
Meanwhile, whisk together the rest of the ingredients. As soon as the asparagus is tender, put it in a serving bowl, pour the dressing over it, and serve it warm.
