Bok Choy Salad
(from Stearns Farm Newsletter November 2008)
1 bunch bok choy
3 or 4 scallions
4 oz sliced almonds
1/2 cup sesame seeds
1 Tb sugar
1/2 cup butter
2 packages ramen noodles (broken)
1/4-1/2 cup dried cranberries
dressing:
3/4 cup oil
1/4 cup red wine vinegar
1/2 cup sugar
2 Tb soy sauce
Chop bok choy and scallions and combine. Melt butter in a pan and combine almonds, sesame seeds, sugar, and ramen noodles (broken), and saute until brown. Mix together over chopped bok choy and top off with the homemade dressing and dried cranberries.
