Spicy Greens Fresh Rolls

Ingredients:

4 8-in. rice paper rounds

1 bunch radishes, sliced thinly

5 mustard green leaves, shredded

1 small head of lettuce, shredded

zest and juice of 1 lime

1 t. salt

1 T. sugar

1/2 cup mint leaves

 

Directions:

• Mix radishes, mustard greens, and lettuce. Whisk together lime juice and zest, salt, and sugar and pour over salad mix.

• Take one softened sheet of rice paper (see below).

• Place handful of salad mixture on bottom third of rice paper

• Top it with some mint leaves, and roll as directed below.

 

 

 

Rolling Summer Rolls

 

1. Bring large pot of water to boil. Then turn off.

 

2. Dip one rice paper into hot water. Rotate the rice paper quickly until it’s pliable. Remove it from the water and spread it out on a clean working surface. (It’s not hard to work with, although it reminds me of what it might be to work with a jellyfish.)

 

3. Place your fresh roll mixture on the bottom third of the wrapper. Starting with the salad end, begin to roll the wrapper tightly around the salad. When you’ve rolled halfway up, fold the sides of the wrapper towards the center, then continue rolling.

 

 

Soy-Lime Dipping Sauce

 

¼ cup soy sauce

1 clove minced garlic

1 T minced ginger

grated zest and juice of 1 lime

1 t sugar

1t hoisin sauce

 

whisk ingredients together
