Sauteed Mustard Greens
adapted from an Elizabeth Germain recipe
serves 4
Ingredients:
Large bunch of mustard greens
2 large cloves of garlic
2 Tbs olive oil
juice from half a lemon
salt & pepper
Instructions:
Mince garlic. Wash greens.
Roll and cut greens into ¼” ribbons.
Heat 2 Tbs. of olive oil in Dutch oven until shimmering.
Throw in greens, without drying them, taking care not to get splattered (if greens are dry, add a ¼ c. water). Stir.
When greens have wilted and grown tender, create space in the middle of the pan, add a drizzle of oil and press garlic into oil until slightly brown and aromatic – about 30 seconds.
Serve with a splash of fresh lemon juice or a sprinkling of vinegar.
