Pasta, Arugula and Peas
serves 2
Ingredients:
Pasta of choice – ½ pound
bunch of arugula, washed
½ c to 1 c fresh peas, shelled
1 – 2 Tbs olive oil
4 Tbs grated parmesan
salt & pepper
Instructions:
Cook up the pasta.
When pasta has one minute left to cook, throw in the peas.
Drain.
Place washed arugula in serving bowl with oil and parmesan.
Dump hot pasta on top,
Mix and season with salt & pepper.
For a richer serving, add a dollop of low-fat ricotta cheese, or a pat of butter.
