Marinated Green Beans with Fresh Herbs

1 1/2 lbs slim green beans, rinsed and trimmed
salt to taste
12 large green olives, pitted and sliced (optional)
4 cloves garlic, peeled and crushed
1/4 cup extra virgin olive oil or to taste
3 Tbs fresh basil leaves, shredded
1 Tbs fresh oregano leaves
1 Tbs capers (optional)
1 1/2 Tbs red wine vinegar
3 oz feta or parmesean cheese (optional)
Steam beans until crisp/tender. Meanwhile, place salt, olives, garlic, herbs, and capers in a large bowl. Add hot beans to bowl, sprinkle on vinegar and oil and toss to coat. Taste, adjust seasonings, and marinate at room temperature for about 3 hours. Just before serving, remove garlic. Sprinkle with crumbled or grated cheese. 4-6 servings.
