Guacamollie

(from Vegetable Heaven by Mollie Katzen)

(makes 2 cups)

 

This is a tasty alternative to guacamole.

 

2 cups peas, fresh or frozen

1 Tb. + 1 tsp. lemon juice

½ tsp. minced garlic

2-3 Tb. torn cilantro leaves

¼ cup minced red onion

½ cup minced ripe tomato

6 Tb. yogurt (optional)

Salt to taste

Red pepper flakes to taste

 

If the peas are frozen, put them in a colander and run warm water over them until they are defrosted but still cold. Drain well, then put them in a food processor. Add the lemon juice, garlic, and cilantro, and puree until very smooth. Transfer to a medium-sized bowl.

 

Stir in the onion, tomato, and yogurt, if desired. Add salt and red pepper flakes to taste. Let it sit for about 10 minutes, then serve, or else refrigerate and serve it within an hour or two.
