Gingered Broccoli
(From Moosewood Restaurant Low-Fat Favorites)
1 head broccoli
1 Tb. grated fresh gingerroot
2 garlic cloves, sliced
1/4 cup rice vinegar
1 Tb. hoisin sauce or sugar
2 Tb. soy sauce
Remove the tough base of the broccoli and cut the broccoli into spears. Combine the rest of the ingredients in a saucepan, bring the mixture to a boil, and put the spears into the pan. Steam the broccoli for 5 to 7 minutes until it's tender but still brightly colored. Serve immediately with some of the sauce spooned over it.
