Early Summer Vegetable Rolls

Ingredients:

10 8-in. rice paper rounds

2 oz cellophane noodles

2 T seasoned rice vinegar

5 scallions, thinly sliced

1 small head of lettuce, shredded

fresh shelled peas, raw if sweet

1/2 cup coarsely grated carrots

1/2 basil leaves, shredded

1/2 cup mint leaves, shredded

Coconut-peanut sauce (see below)

 

Directions:

Cover cellophane noodles with boiling water and let stand for 15 min.

Combine the grated carrots, basil, mint, scallions, and peas in a bowl.

Take one softened sheet of rice paper (see below).

Place handful of shredded lettuce on bottom third of rice paper.

Top it with dollop of peanut sauce.

On top of that place a handful of cellophane noodles.

The pea mixture comes last.

Roll up the rice paper as directed below

 

 

 

 

Coconut-Peanut Sauce

 

 

Ingredients:

 

1/2 onion, minced

2 cloves garlic, minced

1 t-T red pepper flakes

3 t vegetable oil

1 T. minced ginger root

1/2 cup water

1/3 cup creamy peanut butter

1/3 cup coconut milk

1/3 cup hoisin sauce

 

Directions:

1. Cook onion, garlic, ginger and red pepper flakes (the amount will depend on how spicy you like your sauce. I used 1 T Aleppo pepper flakes) in the oil in saucepan over moderate heat.  Cook, stirring, until golden and aromatic, about 4 minutes. Whisk in remaining ingredients. Simmer for 1 minute, then cool. Rolling Summer Rolls 1. Bring large pot of water to boil. Then turn off.

 

2. Dip one rice paper into hot water. Rotate the rice paper quickly until it’s pliable. Remove it from the water and spread it out on a clean working surface. (It’s not hard to work with, although it reminds me of what it might be to work with a jellyfish.)

 

3. Place your fresh roll mixture on the bottom third of the wrapper. Starting with the salad end, begin to roll the wrapper tightly around the salad. When you’ve rolled halfway up, fold the sides of the wrapper towards the center, then continue rolling.

 

 

 

Soy-Lime Dipping Sauce

 

¼ cup soy sauce 

1 clove minced garlic

1 T minced ginger

grated zest and juice of 1 lime

1 t sugar

1t hoisin sauce

 

whisk ingredients together
