Celeriac Mashed Potatoes
This recipe is a good way to sneak the strange celeriac into a meal without anyone complaining.
Ingredients
- 3 - 4 medium size potatoes, washed and peeled
- 1 celeriac root, washed and peeled
- 2 cloves garlic
- 1/2 to 1 cup milk, cream, yogurt, or sour cream
- 2 Tbsp. butter
- Salt and pepper to taste
- Parsley or chives, minced, to taste
Cube all vegetables and boil in salted water for about 20 minutes, or until all vegetables are tender. Drain and mash potatoes with a potato masher or a couple of forks. Melt butter and add to potatoes. Slowly stir in milk with spoon or mixer until a creamy consistency is reached. Mashed potatoes should be smooth and not lumpy. Season and mix in salt and pepper. Stir in minced herbs just before serving.
