Cascadilla Soup
(from Moosewood Cookbook, revised ed., by Mollie Katzen)
1 small cucumber, peeled and minced
1 scallion, finely minced
1 small clove garlic, crushed
1 Tb. fresh dill, finely cut, or 1 tsp. dried dill
4 cups tomato juice
1 cup plain yogurt, nonfat or low-fat
1 small bell pepper, minced
3-4 mushrooms, thinly sliced
salt and pepper, to taste
Combine everything and chill well. That's it.
