Artichoke Patois

Artichokes Patois

(My kids love artichokes.  They don't love greens.  But this simple combination works!)

 Ingredients

 

    * 1 bunch dark leafy greens (Mustard, Collard, Chard, Kale)

    * Juice of one lemon
    * 4 tablespoons grated Parmesan
    * 1 Can Artichoke bottoms
    * a few green olives
 

 

Steam or boil the greens for just a few minutes, till soft.  Drain and put greens into food processor and blend until well chopped. Add juice of  fresh lemon and Parmesan.  Blend until mixed in.
 

 
Open can of artichoke bottoms and arrange "cup" side up on a plate.  Spoon in the greens to fill the artichoke bottoms.  Put on plates, sprinkle with a little chopped green olive.


Good with lentils and rice, etc.
